Our main dish, the premium rib made the Gaucho way. The whole rib is cooked in a spike, and is placed right next to the open fire. Its preparation requires more than 24 hours.
With such a high level of fat, the premium rib calls for a strong wine. We recommend the Tannat from Uruguay.
